OBJECTIVE: While much of the produce provided to the Farm Stand by our partner organization, Food Gatherers of Ann Arbor MI, is merely cosmetically imperfect, or is proportionally so (i.e. deemed too large, or too small, or too misshapen to be commercially viable), a small fraction of some deliveries is nevertheless past the point of rescue. The process of sorting such produce often leaves the residual from decomposition on equipment, which is not merely unpleasant, but can promote the spread of food borne illness. Hence, the need for a sink-table to wash viable produce and equipment. While it is the case that off-the-shelf sink-tables are widely available, the unique layout and spatial constraints of the Farm Stand facility argued instead for the fabrication of a custom sink-table. MORE DETAILS: Using SketchUp, the Advance Tabco base model KTM-309 was modeled and then modified for additional length, the inclusion of dual sinks, and a countertop edge to prevent fluids from leaking onto the floor. After the sink-table was modeled in SketchUp, the corresponding LayOut document was generated and provided to Advance Tabco for use in the manufacturing process.
OUTCOME: The generation of the comprehensive and precise technical drawing ensured the seamless integration of the custom sink-table into the rest of the Farm Stand fixtures and equipment.
